Yummy Chicken Puffs. This is a recipe I've used for several years now. It comes from a Better Homes and Gardens Cookbook that we got for a wedding gift in 1980 (and I've tweaked it a little bit).
Puffs
1/2 cup water
4 Tlb. butter
1/2 cup all purpose flour
2 eggs
1/2 cup shredded process Swiss cheese
Filling
2 cups finely chopped cooked or canned chicken
1/4 cup finely chopped celery
2 Tlb chopped pimiento
1/4 cup mayonnaise
1 tsp salt
dash of pepper
Melt butter in 1/2 cup boiling water. Add flour and dash of salt; stir vigorously. Cook and stir till mixture forms a ball that doesn't separate. Remove from heat and cool slightly. Add eggs and beat vigorously till smooth. Stir in cheese. Drop dough onto greased baking sheet, using 1 level teaspoon dough for each puff. Bake at 400 degrees about 20 minutes. Remove puffs from oven; cool and split.
Combine remaining (filling) ingredients. Fill each puff with the filling.
(I think it makes about 24 puffs.)
